Fruit Payasam
Ingredients -
- Full cream milk – 1 liter
- Sugar – ½ to ¾ cup (adjust to taste)
- Mixed fruits (apple, banana, grapes, pomegranate, pineapple) – 1 to 1½ cups, finely chopped -
- Condensed milk – ¼ cup (optional, for extra richness)
- Cardamom powder – ½ tsp -
- Cashews – 10 -
- Raisins – 10 -
- Ghee – 1 tbsp Optional
- Vermicelli or sago – 2 to 3 tbsp (if you like a thicker version)
Instructions:
1. Boil the milk in a heavy-bottomed pan. Simmer and reduce slightly (around 10–15 minutes), stirring occasionally.
2. Add sugar and stir until it dissolves. If using condensed milk, add it now and reduce sugar slightly.
3. (Optional) **If using vermicelli or sago**, cook it separately and add to the milk. Let it simmer till soft.
4. Add **cardamom powder** and turn off the heat. Let the milk cool to room temperature.
5. Once cooled, mix in the **chopped fruits** gently. Avoid fruits like citrus or kiwi that may curdle the milk.
6. In a small pan, **heat ghee**, roast **cashews and raisins** till golden, and add to the payasam.
7. Chill in the fridge for 1–2 hours and serve cold
