Gobi 65 Recipe
Gobi 65, it's a delicious and spicy appetizer made with fried cauliflower florets coated in a flavorful batter. The dish is a vegetarian variation of the famous Chicken 65 recipe, originating from South India.
Ingredients
- For the Gobi 65 Batter:250 gm cauliflower, cut into bite-sized florets
- ½ cup all-purpose flour (maida)
- 2 tablespoons cornflour or rice flour
- 2-3 tablespoons thick yogurt (curd)
- ¾ teaspoon red chili powder
- ¼ teaspoon turmeric powder
- ½ teaspoon garam masala
- 2 teaspoons ginger-garlic paste
- Salt to taste
- Oil
- A pinch of red food color (optional)
- Water as required for the batter
For Garnish and Tadka (Tempering):
- Oil
- 3 garlic cloves, chopped
- 1 sprig fresh curry leaves
- 3 green chilies, slit
Instructions
Prepare the Cauliflower
- Blanch the cauliflower florets in boiling salted water for 2-3 minutes, then drain and set aside.
Make the Batter
- In a bowl, mix all-purpose flour, cornflour/rice flour, red chili powder, turmeric powder, garam masala, and salt.
- Add yogurt and ginger-garlic paste. Gradually add water to make a smooth, thick batter.
- If using, add a pinch of red food color for the signature Gobi 65 look.
Coat the Cauliflower
Add the blanched cauliflower florets to the batter and ensure they are well-coated.
Fry the Cauliflower
- Heat oil in a deep frying pan or wok over medium heat.
- Fry the batter-coated cauliflower florets in batches until golden and crispy. Remove and drain on paper towels.
Prepare the Tadka (Tempering)
- In a separate pan, heat a tablespoon of oil.
- Add chopped garlic, curry leaves, and slit green chilies. Sauté until aromatic.
Combine and Serve
- Toss the fried cauliflower in the prepared tadka for extra flavor.
- Serve hot as an appetizer or snack, garnished with fresh curry leaves and green chilies.
Tips
- Crispier Version: Add a tablespoon of rice flour to the batter for an extra crunch.
- Serving Suggestion: Pair Gobi 65 with mint chutney or ketchup.
- Healthier Option: Air-fry or bake the cauliflower instead of deep frying.
