Payasam Recipe


Ari Payasam (Rice Kheer) is a traditional Kerala dessert, often prepared during festivals and special occasions. It is rich, creamy, and flavored with jaggery and coconut milk. Here’s a simple and authentic recipe for Ari Payasam:

Ingredients:

  • 1/2 cup unakkalari (Kerala raw rice or matta rice)
  • 3 block jaggery (shaved or powdered)
  •  Water 1 cup
  •  Thick coconut milk  1.5 cup
  • 4 tbsp ghee
  • ¼ tsp cardamom powder
  • 10-12 cashews
  • 10-12 raisins(optional)
  • 2 tbsp grated coconut (optional)
  •  Coconut bits
  • 1 pinch dry ginger powder (chukku podi)
  • 1 pinch cumin powder (jeeraka podi)
  • 2 cups water
  • Water for cooking rice(required amount of water)
Method

    1.Wash & Cook Rice:
  • Rinse the unakkalari (Kerala raw rice) thoroughly and drain.
  • Add the rice to a pressure cooker with required amount of water.
  • Close the lid and cook on medium heat for 4-5 whistles until the rice is soft and slightly mushy.

2.Prepare Jaggery Syrup:
  • In a separate pan, add 1 cup of water and melt 3 blocks of jaggery on low heat.
  • Strain the syrup to remove any impurities and set it aside.
3.Combine Cooked Rice & Jaggery:

  • Heat 2 tbsp of ghee in a pan over medium heat.
  • Add the cooked rice to the pan and sauté for 2 minutes, stirring continuously.
  • Pour the jaggery syrup over the rice and mix well until fully combined.
  • Let it simmer on low heat for 5-7 minutes, stirring occasionally, until the mixture thickens.

4.Add Thick Coconut Milk:

  • Lower the heat and add 1.5 cups of thick coconut milk.
  • Stir continuously and cook for 1-2 minutes on low heat. Do not boil after adding coconut milk.

5.Flavoring & Garnishing:

  • Stir in ¼ tsp cardamom powder, 1 pinch dry ginger powder (chukku podi), and 1 pinch cumin powder (jeeraka podi). Mix well.
  • In a small pan, heat 3 tbsp ghee and fry 10-12 cashews, 10-12 raisins (optional), coconut bits, and 2 tbsp grated coconut (optional) until golden brown.
  • Add this to the payasam and mix well.

6.Rest & Serve:

  • Let the payasam sit for 10 minutes to allow the flavors to blend.
  • Serve warm or at room temperature.
