Sadya Aviyal
Aviyal is one of the main dishes of every Kerala Sadya,it can be made with different types of vegetabeles.There is a wonderful story behind aviyal recipe,the dish 'Aviyal' was invented byBhima,one out of the five Pandavas from the Mahabharata epic. As per the legend, during their 14-year exile, Bhima was given the charge of the royal kitchen of King Virata as a cook. During that time it is said that he invented this dish out of necessity.
Avial or Aviyal is a popular dish of Kerala and Tamilnadu.You can make Aviyal at home easily because not only it is easy to make but is also super healthy.Peparation of this dish varies from region to region and may have a little different taste as well. In some regions people use tamarind ,mango instead of yoghourt for sour taste.Here i am sharing one dry Aviyal Recipe.
Ingredients
- Coconut oil 2-4tbsp
- Yam (Chena) 100gm
- Carrot 1
- yellow cocumber 100gm
- Snake gourd 75 gm
- Raw banana1
- LongBeans(4)
- Drumstick 1-2
- Chembu 1
- Curry Leaves
- Green Chilli 3-4 slitted
- Turmeric Powder 1/2 tsp
- Chilli Powder 1/4 tsp(optional)
- Salt
- Tamarind (a gooseberry size)
- Big onion 1(You can use small onion (10) instead of big onion)For Grinding
- Grated Coconut 1 cup
- Green chilli 3
- Cumin seeds 1/2 tsp
- Fenugreekseeds 2(optional)
- Curryleaves
- Shallots 4(optional)
Method
- Take vegetables and peel off the skin. Wash these vegetables .
- Cut the vegetables into 2inch(lengthwise) pieces.
- Slice greenchilli and onion(lengthwise).
- Soak Tamarind .
- For making this aviyal i used clay pot. When you are making dry aviyal recipe always makes sure to use heavy bottom pan.
- Heat coconut oil in a pan.
- Add the vegetables in to the pan along with turmeric powder and salt until they are cooked.
- Grind coconut,shallots,Curry leaves,cumin seeds and green chilli into coarsely paste.
- When the vegetables are cooked add tamarind pulp.
- Add ground coconut mixture and combine it well
- Cover and cook on low heat for 4 minutes.
- Switch off the flame once the coconut mix is cooked.
- Pour coconut oil.
- Garnish with Curry Leaves.
- Serve
