Mutton Roast
Ingredients
1.Mutton 1kg
2.Turmeric Powder 1/2 tsp
3.Pepper Powder 2tsp
4.Salt
5.Water 1/2 glass
6.Dry Chilli 3
7.Coriander Seeds 3tsp
8.Cinnamon sticks 1 small piece
9.Cardamom 8
10.Cloves 5
11.Cumin seeds 1/2 tsp
12.Fennel seeds 3/4 tsp
13.Whole pepper 1 tsp
14.Big onion sliced 3
14.Curry Leaves
15.Crushed ginger and garlic 2tbsp
16. Tomato sliced 1big
17.Coriander Leaves
18.Coconut oil 3tbsp
Method
1.In a pressure cooker, add mutton, pepper powder,TurmericPowder and salt, mix well, and cook for 4-5 whistle.Turn off the heat and let the pressure release on its own.
2.Dry roast 6-10 ingredients
3.After roasting the masala switch off the flame and keep it aside for cooling down.
4.When roasted masala is completely cooled down grind coarsely.
5.Heat oil in a pan.
6.Add sliced onion and saute.
7.Add crushed ginger garlic and curryleaves ,saute again until it becomes light brown colour.
8.Add ground masala into pan and mix well.
9.Add tomato sliced and saute.
10.Add cooked mutton pieces along with the gravy and a good mix.
11.Add more salt if required.
12.Cook on medium flame for 5-6minutes until the gravy is almost dried up and the mutton is roasted well.
13.Here i am not drying up the gravy too much. If you like dry mutton roast you can dry up completely.
14. Garnish with coriander leaves

Notes:
1.Pressure cooking time may vary depends upon the mutton and cooker you use. Switch off cooker and let the pressure drop naturally.
2.Use coconut oil for this recipe.
3.If you like you can add coconut bits(thengakothu) for taste.You can add these along with mutton pieces when you pressure cook.
